What Is the BIG CUT — and Why Is One Steak Better Than Two?
The BIG CUT is Armoury's pioneering large-format steak: a 500g Angus Ribeye (RM300) cut thick and made to be shared by two people.
Why thick, and why shared? Because when steak hits a hot pan, it loses moisture — and moisture is weight. Thin steaks, with more surface area for their size, lose the most. A thick 500g cut retains significantly more of its weight through the sear, which means more of the steak you paid for actually reaches your plate — juicier, and evenly rose-pink from edge to edge.
